Sabudana / Sago / Sabbakki Idli

Sabudana idli or sabakki idli is a popular and healthy breakfast that you can make with very less planning. 
I tasted this idli at my aunt's home when was in Bangalore. It was so tasty and and spongy . When eaten piping hot with some tomato chutney this is the best 🙂 

 To make sabudana/sago/Sabbakki idli recipe no grinding is required. We can easily make this idli we need idli rava and tapioca pearls and yogurt.

Sago are a source of pure carbohydrate with very little protein, Vitamin C, calcium and minerals. Sago is a common ingredient used in Indian recipes

In this idli Sabudana pearls are clearly visible and we get to feel while chewing. My daughter Prapti loved the transparent pearls in the Idli. Everyone at home liked this idli. This recipe is handy in many situations. When you run out of Urad Dal or bored with Urad Dal Idli or want the instant ones (no grinding work) you can choose this simple yet easy Sabudana Idli or Sago Idli.
Ingredients:
1/2 cup sabudana / sago / javvarisi / sabbakki
1 cup idli rava / rice rava
2 cups curd / yogurt, fresh / sour
1-2 cup water, add as required
salt to taste
Few cashews ( optional)
1/4 tsp baking soda, 

Method:
In a large mixing bowl take sabudana/ sago / Sabbakki, idli rava also add yogurt
add around 1 cup of water and mix well.
keep the batter to rest and ferment overnight or atleast 8 hours.
Mix the batter well, then add 1/4-1/2 cup water as required to adjust the consistency of idli batter, add some salt to taste, just before steaming add a pinch of baking soda and mix well till it turns frothy.

Take  the Idli plate and pour the batter immediately into the idli plate. do not rest the batter.Steam it for 8-10 mins on medium flame. allow it to rest for 5 mins then unmould.
Serve hot with any chutney of your choice.
