Spiced Dry Fruit and nut cake !!







Spiced Fruit  and nut cake made with the wholesome goodness of whole wheat and jiggery, this eggless recipe is perfect for the holidays and a hit amongst the kids for sure!
If you have suddenly decided that you’d like to make a Christmas cake this year but you want to get it all in the oven with a minimum of fuss, then this Healthy Christmas Fruit Cake recipe is made for you. There’s a little bit of soaking of the fruit involved, but no more than 15 minutes; then you just get to stir everything up, pop it in to the oven and glaze or ice it (if you want to). Too easy!

This festive, flavorful, and deliciously moist fruitcake is all you need to enjoy the holiday season. This fail-proof holiday staple recipe of fruit cake can never go wrong.
The combination of nuts, dried and candied fruits in this cake is beyond the word delicious. This cake is a delight for fruit lovers because it has so many soaked dried and candied fruits and very little batter, which is there to just hold the cake.

Christmas is not considered celebrated without slices of fruit cake. And this recipe has some exotic alcohol and non-alcohol options for soaking dried fruits. So making it kid-friendly is actually a piece of cake, literally.
So without waiting much time let's jump to the recipe:


Ingredients:
Whole Wheat Flour (Atta)- 11/4 cup
Jaggery/ palm sugar – 1/2 cup
Coconut oil –2/4cup
Curd – 2 tbsp
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Cinnamon powder – 1/4 tsp
Ginger powder – 1/4 tsp
Fennel powder -1/4 tsp.
Nuts (walnuts, almonds etc.) – 1/2 cup 
Dried Fruits chopped (Raisins,dates , apricot) 1/2 cup 
Fruit Juice (Mixed Fruit/ Grape/ Orange) 1/4 cup
Organic Milk-1/4 cup 

Method
Preheat oven at 350°F and grease a cake tin or loaf pan .

Soak all dried fruits in fruit juice for 2 hours.
Sieve all dry ingredients in a bowl – Whole wheat flour, baking soda and powder, cinnamon powder, Fresh ginger/ powder, nutmeg powder, cardamom and clove powder and fennel powder.
Add jaggery and hot water mix until the jaggery melts now add orange juice next add soaked dried fruits almonds and walnuts, add oil, milk and curd mix or buttermilk.
Add both dry and wet ingredients to form a thick batter. Add buttermilk gradually if batter gets too thick.
Grease a baking dish and pour the cake batter in it. Sprinkle some crushed nuts on top of the batter.
 Bake the cake in preheated oven at 350 degrees  F for 30 minutes. Once baked check with tooth pick. Once ready remove the cake from the oven and allow it to cool down.
Once cool, cut and relish it with family and friends!!
