Vegan Gluten free chai spice almond biscotti!!!


Biscottis are basically Italian biscuits that originated in the tuscan city of Prato. These are usually oblong shaped, twice baked, dry, and crunchy biscuits best for your breakfast or evening tea time.
These are super easy to make and you will never go back to the store-bought ones. Totally customizable, you can make any flavor you want. The basic recipe remains the same with just the change in the flavor.

Since I always prefer a healthier alternative., I made these eggless biscotti with almond flour and coconut sugar. I added almonds that were in hand and chsi spice for that fall vibes .

These are definitely a great snack option, especially for kids to pack in their snack box or to give them as an after school snack. Since these days my daughter is attending an online school, she likes to munch on them during the break time. It keeps her filling and also very importantly there is no artificial preservative which I always stress to keep kids away from.

There are so many flavors that you can try...I choose the one which I have in my hand. With very minimal ingredients you can bake these healthy biscotti's at home and not have to depend on store-bought ones for snacks.!

 
Ingredients:

Chai Spice

1/4 tsp ground ginger

1/4 tsp  ground cinnamon

1/4 tsp ground cloves 

1/4 tsp ground nutmeg

1/4 tsp ground cardamom

Biscotti

2 cups almond flour

1/4  cup of coconut sugar

1 tbsp tapioca starch

1 tsp baking powder

1/4 tsp salt

 Chai Spice

1 tsp Vanilla extract

1 cup chopped almonds

4 tbsp almond milk.

Method:

1.Preheat oven to 350-degree Fahrenheit.

2. Line a baking sheet with parchment paper and keep aside.

3. In a big bowl, combine the flour, coconut sugar, salt, chai spice , tapioca starch ,and baking powder. Mix well.

4. Add milk, vanilla essence, and almonds. Mix well again till completely combined and the mixture is moist throughout gather everything and make a dough. Divide the dough into two parts.
7. Make a log out of each dough portion, flatten them and place them in the baking tray...

8. Bake in the preheated oven for 20 minutes. Don't turn off the Oven, as we will be baking again. And then cool them down for 10 minutes.
9. Carefully transfer the logs on to a cutting board and slice on an angle into 1/2 -1 inch slice. Place the slices cut side down back onto the baking sheet and again bake another 7 to 10 minutes until lightly browned. Keep an eye on them. If thin, they may take less time. Take out and let them cool for 5 minutes and again place them in oven for 5 more minutes.
10. Once done...remove them on a cooling rack and let them cool for some time. They will become crisp as they cool down.
