Mishti Doi( Fermented Sweet Yogurt)

Mishti Doi is a fermented rich & creamy sweet doi (yogurt) that is a widely popular Bengali dish.

It is one of those dishes that brings a sweet taste to your mouth at the very mention of it.
 
"Mishti” means sweet and “Doi” means yogurt. Mishti Doi is a famous sweetened yogurt from the eastern part of India (especially in West  Bengal).

The difference between normal yogurt and Mishti Doi is that the first Mishti Doi is sweetened. Secondly, it is made of thickened milk. That is the milk is reduced and thicken and then the sweetener and yogurt are being added. As the milk is reduced it adds a nice rich and luxurious taste to the yogurt.
 
You can use the culture from the previous batch of home made yogurt or also use store-bought yogurt starter.
Any yogurt which has active live cultures can be used as a yogurt starter. 

I make yogurt fresh every day as it is a very intrinsic part of our meals..and prefer to use fresh home made curd culture in this recipe.
 
It requires 3 main ingredients and the preparation is even better and simpler. Even if you have never cooked or baked in your life, you will be able to make this dessert. 
So let's jump to the recipe.

 Ingredients:

3 cups Milk

1/4 cup palm jaggery 

2 tablespoon Curd (Dahi / Yogurt) ,   whisked


Method:

To begin making the Mishti Doi Recipe, place a heavy bottom pan on the heat. Add the milk and warm it on a medium heat.
 
 Add 2 tablespoon coconut sugar to the milk. Allow it to dissolve while the milk comes to a boil.
Turn the heat down and allow the milk to continue boiling until it reduces by half. Add 1/4 cup palm jaggery let  it dissolve Then, take it off from the  heat and set aside.

Let the milk cool slightly. Then add the whisked yogurt, stir well and pour the mixture in earthen pots or glass bowls.
Let the doi set in a warm place for few hours. When set, store the Mishti Doi in refrigerator and serve chilled.

Serve Mishti Doi after a delicious meal.
