Rustic Whole Wheat Apple Gallate!!



Apple Galette is very similar to pie in every way, except it’s a lot easier. No fussing with a pie plate or crimping edges. The allure of the Apple Galette is its beautiful rustic appearance.
 
I have had my eye on galette’s for quite some time. But in all honesty, baking a from-scratch pie crust stressed me out.  The exact measurements, the extremely chilled butter, kneading but not too much. All seemed like too much work and no room for error.

If you don’t know what a galette is, simply put, it’s a rustic pie. You take pie dough, roll it out flat, fill the center with fruit and sugar, fold up the ends and bake it. It’s kinda like a cross between a pie and a pizza.

This recipe is made with whole wheat flour instead of white flour, no butter, no egg is used in this crust ...it's just simple combo of wheat flour and coconut oil ...It’s little more rustic, but just as manageable, and just as delicious!

If you’ve ever wanted to throw the rolling pin through the window while trying to make a perfect crust then I can relate. You will be pleasantly surprised at how easy it is to handle this pastry. No more frustratingly cracky dough. This pastry crust sticks together but not at the cost of being tough. It is still deliciously flaky!
 
Whole wheat dough has a wonderful nutty flavor and it pairs beautifully with apples, pears and almost any fruit you want to bake into it. Plus, you get the all the fiber and nutritional goodness of using whole wheat flour  .


For crust:

1 Cup whole wheat flour 
1/3 Cup coconut oil 
2 Tsp coconut sugar
2-3 Tbsp cold water
 2 big pinch of pink himalayan salt

For filling:

3 medium size Organic apples 
4 Tbsp coconut sugar
1 teaspoon- Organic cinnamon
1/2 teaspoon-Organic nutmeg 
1/2 of a Organic lemon juice.


Method:

Pre heat the oven at 375 degrees F and line the baking sheet with the parchment paper.


In a bowl add the the dry ingredients wheat flour , coconut sugar , coconut oil, salt mix all the ingredients well add the cold water, starting with 1Tbsp and adding more if it won't come together and keep aside the dough for a 2 to 3 minutes.
Now peel and slice your apples. Try to get them nice and thin. Toss them with 4 Tbsp of coconut sugar, nutmeg, cinnamon,and add 1/2 of lemon juice in to it and give it a good mix .
 Now take a parchment paper put the pie dough and put one more parchment paper and roll the dough into disc once you get the desired shape just put all the apple slices in a center by discarding all the juices from them.
Fold any remaining crust over onto the apples and crimp it at inch intervals or wherever your very rustic design looks to need crimping. 
Then sprinkle the rest of coconut sugar on the apples and the crimped crust. It will look like a lot, and you can reduce it by a tablespoon or two if you wish, but that was too tart for Kip (not a problem; he just got some ice cream to go with, but still). The sugar will combine with the juices of the apples and butter to make a syrupy yum, so don't worry about it.
Bake at 375 degrees F in center of oven until apples are soft and a bit brown at the edges, or for about 35 minutes. 
Enjoy this warm dessert with the scoop of vanilla ice cream it tastes decadent πŸ˜‹
