The Amazing Vegan mango cake! 

If you are looking for the Eggless, sugarless dairy-free mango jaggery cake this is it! Easy to make and it’s vegan.

This cake is very special as this is the idea of my little princess Prapti to bake this cake for her dad on Father’s Day and surprise him !!! So we decided to bake this simple and healthy vegan cake I have been trying to bake different types of cakes in my kitchen( Eggless & Vegan) and wanted to try this cake. We all are all obsessed with mango and this dessert is seriously Incredible!! moist and delicious eggless Mango jaggery semolina cake.

My little princess Prapti is 5 and she made this cake with very minimal help from me as she wanted to make this cake by herself for her Dad on Father's day!! I am so proud of her she did this cake like a pro!! You will be seeing her pics down in the step by step procedure of making this cake as I mentioned earlier she baked this cake from scratch!!

Without wasting much time let's jump to the recipe :

Ingredients:
1 cup semolina
1 cup fresh mango puree
1/2 cup powdered jaggery/coconut sugar
1/4th cup coconut oil
1 teaspoon baking powder
1/4th teaspoon pink Himalayan salt
6 cardamom pods( take out the seeds and make a powder out of it.
Slices of 1 fresh mango for decorating
2 tablespoons of desiccated coconut to garnish.

Cooking Method:

• Pre-heat the oven to 375 degrees F and line the baking tray with parchment paper.
                      
    
 • Mix the Semolina(Rava) with jaggery / coconut sugar cardamom, nuts(optional) and baking       powder 
• Add the mango pulp and mix it again. Let it sit for 10 minutes.
          


 


• Place in the oven and bake for 30-35 minutes


• Allow to cool completely and decorate with fresh mango sliced and desiccated coconut then cut and serve.
