Jaggery Toffee!!

If you are an eighties kid like me, these toffees will take you straight back to those Lacto King days, to a time when the very definition of happiness was a piece of crunchy  , long lasting candy. Recreating that moment in time, but this time knowing exactly what I was putting in my body, was magical for me. 

These crunchy  sweet toffees have a deep caramel flavour with a  hint of ghee and are wide open to improvisation. Flavour the candy with vanilla or cinnamon if you wish. . You could experiment with other ‘healthier’ white sugar substitutes like palm or coconut sugar.Topped with sprinkles or crushed nuts these toffees could easily become the pièce de résistance at birthday parties or school events.  

And with Christmas around the corner, a jar of handmade toffees will make for a perfect, personalised present. Something your child and you can take pride and joy in making and in giving.



Ingredients:

Jaggery (gud) - 1 cup,
Clarified butter(ghee) - 1/2 tsp,
Baking powder - 1/2 tsp,
Baking soda - 1/2 tsp.


Method:
Grease a pan, lined with parchment paper.

In a pan, add jaggery along with clarified butter.
Let it cool down. Break into pieces. 

On low to medium flame allow jaggery to melt completely. Stir constantly to prevent jaggery from burning. 
Check the consistency of jaggery by dropping couple of jaggery drops into cold water. Remove jaggery drop from water and check, it should be crunchy to break. If drop  it's  not crunchy but chewy, then cook further to get right consistency.
Now add baking soda along with baking powder.
Mix well and immediately transfer mixture into the greased pan or greased surface, add chopped nuts of your choice and press gently.
Wrap each piece with parchment  paper or foil. Store into an air tight container.
