Instant Baked Dhokala !!

Dhokla or khaman is a popular vegetarian Indian snack from the state of Gujarat. It is served as a teatime snack or ‘farsan‘ as they say in Gujarati with a variety of sweet and spicy chutney.
Dhokla is mainly prepared with gram flour (besan), water, lemon juice, green chili, salt, and spices. Hence, it is a gluten-free and vegan snack.

This delicious vegan and gluten-free bites can be steamed, baked, or even cooked in the microwave.  I have baked them in a microwave.

Instant Dhokla, a warm soft, and spongy savory gram flour snack cake tempered with spices. Ready in 10 minutes this cake makes a perfect breakfast, tea time snack.

The instant dhokla is the cheat version of the traditional dhokla recipe where the fermentation time of the batter is reduced by using baking soda or fruit salt/eno.
The instant dhokla is equally spongy, light, airy with balanced sweetness, and spiciness.

And trust me on this one, if you zero-down to one foolproof dhokla recipe, it is one of the easiest Indian snacks to prepare at home.

INGREDIENTS :
For the batter :
1 cup besan/gram flour

2 tbsp rava/semolina 

1/4 tsp turmeric optional

 1/2  tsp ginger paste 

Pinch hing/asafoetida

1 tsp sugar

2 tsp oil 

1/4 tsp salt 

1 tbsp lemon juice

1/2 cup water 

1 tsp Eno fruit salt 


OTHER INGREDIENTS:

3 tsp oil

1 tsp mustard

1/2  tsp cumin/jeera 

1 tsp sesame seeds 

Few curry leaves 

2 green chili, sliced

Pinch of hing/asafoetida 

2 tbsp water 

1 tsp lemon juice

1 tsp sugar

1/4 tsp salt 

2 tbsp coconut, grated 

1 tbsp cilantro, chopped 

Method:-
In a large mixing bowl take besan,  Rava, and turmeric. Add ginger paste, a pinch of hing,  sugar,  oil, and salt. Add water and make a smooth lump-free batter.
Allow resting for 10 minutes later add a tsp of Eno fruit salt to the batter. Mix gently till the batter turns frothy and light.

Transfer the dhokla batter immediately to a greased tray. Place in microwave and turn on for 5 minutes on high power. Cut the dhokla into square pieces or shape of your choice.
Pour the tempering immediately over the dhokla making sure it absorbs completely. sprinkle coconut and cilantro
 Serve soft and spongy dhokla with green chutney or as it is.
