Drumstick Sambar( Nugge Kai Sambar)

Drum stick Sambar !!!
Sambar is probably one universal dish that all south Indian folks love. And it is also that one dish that recognizes a south Indian world wide.
Sambar is one of the very famous lentil-based vegetable stew, served with Rice, Idli, Dosa, and many other South Indian dishes. 
You can use different varieties of vegetables to make Sambar. Here I have used the long tender Drumstick vegetable (Moringa oleifera), which adds a pleasant aroma and taste to the Sambar.

The best part about drumstick sambar is that it tastes extra delicious the next day. So, I always make some extra and we enjoy some steaming hot idlis or crispy dosas or even some rice with this sambar the next day morning.

Drumstick is a very healthy, flavorful vegetable and often recommended in diet especially to increase iron content. Drumstick is also very good for digestion. It is a very widely used vegetable in south Indian cuisine. The leaves and flowers from the drumstick tree (moringa) are also used in different recipes!! 

Ingredients:
  • 3 tsp oil
  • 1 tsp mustard
  • 3 dried red chili
  • Pinch of asafoetida
  • Few curry leaves
  • 6 to 7 shallots, halves  or one large chopped onion 
  • 1 tomato, finely chopped
  • 1/2 tsp turmeric
  • 1 tsp salt
  • drumstick pieces 
  • 2 cups of water
  • 1 cup Toor dal
  • 1/2 cup tamarind extract
  • 2 tbsp coriander, finely chopped
  • 2 tsp Fresh grated coconut /optional 
Cooking Method:
    • Add 1 cup of dal in a pressure cooker with 2 cups water and pressure cook for about 4         whistles.Let the pressure release naturally. 
•  In a large vessel heat, 3 tsp oil and splutter tempering. Add shallots and saute for 2 minutes. also, add     1 tomato and saute until tomatoes soften.

• Next add 1/2 tsp turmeric, 2 tbsp sambar powder 1/2 tsp red chilly powder and 1 tsp salt.saute for a       minute until spices turn aromatic.

• Now add cooked toor dal  mix well cover and boil for 5 minutes or until flavours are absorbed well.
• Add 1/2 cup tamarind extract and stir well.continue to boil for 5 minutes or until the raw flavour of tamarind is gone.

 
• Add fresh coriander leaves and coconut enjoys drumstick sambar with hot steamed rice.
