Beetroot Brown Rice Pulao !!
Beetroot Rice or Beet Rice Pulao the Delicious and kids friendly recipe !!
This is a great way to sneak in some beets into your diet. Easy, vegan & gluten-free meal perfect for busy days.

 Beets are excellent sources of folate, manganese, potassium, and copper. They are also a known source of magnesium, phosphorous, vitamin C, iron, vitamin B 6, and dietary fiber. They are low in saturated fat and cholesterol.

This dish works well with both brown or white rice, and you could also try other grains or pseudo-grains like quinoa or millet for a twist.

Ingredients:
• 1 tbsp ghee 
• 1 tsp cumin 
• 1 bay leaf 
• 4 cloves
• 2 pods cardamom
• 1 inch cinnamon
• 1/2 onion, slice
• 3 chilly’s slit
• 1 tsp ginger garlic paste
• 1/2tomato, finely chopped
• 1 cup beetroot, chopped
• 1/4 tsp turmeric
• 1/4 tsp Garam Masala 
• 1 tsp salt
• 2 tbsp mint finely chopped
• 1 cup Organic brown rice / any basmati rice pre cooked
• 1/2 cup of water 
• 1 tsp lemon juice
• 2 tbsp coriander, finely chopped


Method:
• Wash the brown rice and add 2 cups of water and cook it and keep aside. If you are using white basmati rice then soak it for 20 minutes then drain the water and 1 and 1/2 cups of water,  cook it and keep aside.
• First in a large vessel heat 1 tbsp ghee and saute 1 tsp cumin, 1 bay leaf, 4 cloves, 2 pods cardamom, and 1-inch cinnamon.
•Now add onion, chili, and ginger garlic paste. saute well.
• Further, add tomato and saute until tomatoes turn soft and mushy.
• Add chopped beetroot and saute for 2 minutes.
• Add in turmeric, garam masala, salt, and mint. saute until the spices turn aromatic.
• Sow add 1/2 cup water and mix well.
• Sover and simmer for 12 to 15 minutes.
• Now add cooked rice and mix well add cilantro.
• Serve this hot with Raita!!
