Sprouted Moong Salad !!!
(Protein-rich, vegan and gluten-free salad )
This simple yet and filling healthy sprout salad (green gram) is super easy to make, full of nutrition, and loaded with veggies.

Summer is at its peak here in  Miami Florida and all I am craving for is no-cook salads. Salads that come together in a jiffy and are non-greasy.

When I think of no-cook summer salad I think of this colorful, light, and refreshing healthy sprout salad.

This whole Moong sprouts salad comes together exceptionally fast using a handful of ingredients and is very versatile.

You can pretty much incorporate all the summer veggies you love in this recipe. Moong sprouts salad!!!

So if you are craving for a light lunch, that is protein-rich, vegan, and gluten-free then this sprouted moong salad will leave you satisfied and full.

Ingredients:-
* 1 cup moong sprouts
* 1/2 cup boiled potato cubes 
* 1/2 cup cucumber pieces 
* 1/2 tsp cumin powder
* 1/4 tsp Kashmiri red chili powder
* 1/2 tsp dry mango powder 
* 1/4 tsp salt
* 1/2 tomato, chopped
* 1/2 carrot, grated
* 2 tbsp capsicum, chopped
* 2 tbsp spring onion, chopped
* 2 tbsp cilantro, finely chopped
* 2 tbsp mint finely chopped
* 1 chili, finely chopped
* 1 tsp lemon juice
* 2 tbsp peanuts, roasted

Method :
*  In a large mixing bowl adds 1 cup sprouted green moong, add cumin powder, chili powder, dry mango powder, and salt, well making sure the spices are well combined.
* Next add tomato, carrot, capsicum, spring onion, coriander, mint, chili, and lemon juice mix well making sure everything is well combined.
* Serve moong sprouts salad garnished with 2 tbsp roasted peanuts.
