Lasooni Palak

Garlic flavored spinach recipe Lasooni Palak Paneer is made with loads of garlic. Garlic is known as lasoon or lehsun in India. Lasooni Palak Paneer is full of Iron, Fiber, Protein, Nutritious and it keeps you healthy.

This lasooni palak gravy recipe is very easy to prepare. This looks very similar to palak paneer gravy but both the flavors are very different. For this recipe, you just need minced garlic, chickpea flour, and fresh spinach puree. I didn't use ginger chili paste here but you are free to add.

Garlic has great health benefits. It helps in lowering down cholesterol and builds immunity. The spinach we all know is great with Iron and folic acid. Paneer is great with protein and calcium. 

INGREDIENTS
FOR PALAK PUREE:
• 3 cups water, for boiling
• 1 bunch palak/spinach
• 3 cups cold water, for rinsing
• 1-inch ginger
• 1 clove garlic
• 4 green chili’s.

FOR CURRY:
• 1 tbsp butter
• 1 bay leaf
• 2 pods cardamom
• 1 inch cinnamon
• 1 tsp cumin seeds 
• 1 tsp kasuri methi
• 1 onion, finely chopped
• 1 tbsp gram flour
• 1/4 tsp cumin powder
• 1/2 tsp coriander powder
• 1/2 tsp garam masala 
• 3/4tsp salt
• 1/2 cup water
• 1 tbsp lemon juice

FOR TEMPERING:
• 2 tbsp ghee 
• 4 clove garlic, sliced
• 1 dried red chili, broken
• 1/2 tsp dried fenugreek leaves 


Method :
• In a large vessel get 3 cup water to a rolling boil, add 1 bunch palak into boiling water, allow boiling for 2 minutes.
• drain off the water from spinach and drop into ice-cold water.
• Transfer the blanched spinach into the blender. add ginger, a clove of garlic, and green chili’s. Blend to smooth puree without adding any water. keep aside.
• in a large pan heat a tablespoon of butter and saute bay leaf, cardamom, cinnamon, cumin, and Kasuri methi until it turns aromatic, now add onion sauté until the color changes slightly.
• Add 1 tbsp gram flour saute it until it turns aromatic, now add cumin powder, coriander powder, garam masala salt, saute until spices turn aromatic.
• Add spinach puree and saute slightly now add ½ cup water and mix well adjusting consistency as required.
• simmer for 3 minutes, add 1 tbsp lemon juice and mix well.
• To prepare tempering, heat 2 tbsp ghee and saute 4 clove garlic until it turns golden brown. add dried red chili dried fenugreek leaves saute slightly.
• Pour the tempering over lasooni palak and enjoy with roti.
