Vegan Pearl Millet lentil Dosa .

 Vegan millet lentil crepe made with pearl millet and a mix of lentils this is not only surprisingly tasty but is bursting with nutrition.

Millet has very high nutritional value, unsaturated fats, protein, minerals, fiber. Adding a mix of different types of millet and lentils into your breakfast through this pearl  Millet and Lentil crepes would mean, you are having the most nutritional and healthy breakfast.

Millets are also known as poor man’s food but now they are finding a way into everyone’s diet due to their enormous health benefits. They have good fats that the body needs, helps lower cardiovascular problems, improves the immune system, and helps regulate blood sugar.

Millets are ideal food for diabetes patients. So they are diabetic friendly and can be a good choice to make dosa by substituting rice with millet. Due to their alkaline nature, they are also easy for digestion.

Lentils are a good source of protein so lentils and millets combo makes a power-packed breakfast recipe.

Ingredients

1 cup pearl millet or bajra seeds

1/2  cup moong dal

1/2 cup urad dal

1/2 tsp. salt or to taste
   

Method:

Wash and soak pearl millet and lentils for about 8 hours or overnight. Drain and grind adding a little water and make a smooth paste.

Now heat a cast-iron skillet and grease it with oil. Spread out the batter to form a thin crepe.

Then cook it on medium flame till one side is brown and crispy. Flip and cook evenly.
Serve hot with a spicy green chutney, can   also serve with sambar and coconut chutney.
