Radish Jower flavored flatbread (Moolangi jolad rotti)
Jowar flour, also known as Sorghum flour is rich in antioxidants and minerals such as iron, calcium, phosphorous, and potassium. It is gluten-free and diabetic friendly. Due to its cooling properties, jawar (sorghum) flour is usually consumed during summers.
Among vegetables, radishes are a very good option for those who like to lead a healthy lifestyle. Radishes are very filling, low in glycemic index, and high in fiber. They satisfy your hunger without adding to your calorie count
Let’s jump to the recipe :
Ingredients:( I have used all organic ingredients)
• 2 cup- Jowar / White Millet flour
• 1 cup -Grated radish /Mooli - 1/2 cup
• 1/2 teaspoon- Cumin
• 2 teaspoon-Green Chilli paste ( 4green chilly’s, 2 cloves of garlic small piece of ginger grind it)
• 1 teaspoon-Sesame seeds
• 1/2 teaspoon -carom seeds
• 1/2 teaspoon- coriander powder
• 1/4 -cup - fresh cilantro chopped
• Salt - to taste
• Oil - to cook
Cooking Method:
1 Combine all ingredients (except oil) and knead to a soft dough using adequate hot water. Rest for 5 mins with a covered kitchen towel to prevent drying.
2. Divide the dough into 6 equal portions.
3. Take a parchment paper and take a portion of the dough and flatten to a thickish bread(roti) consistency using the tips of your fingers.
4 Meanwhile, heat a cast-iron skillet to medium heat and cook on both sides till brown spots appear on the surface.
5. Serve hot with home set organic curd and pickle.
