Mango Rusk Pudding!!


This mango pudding is simply the best. And it's also one of the easiest to put together. What makes it extra good is the fact that it is made with organic Greek yogurt or hung curd instead of whipping cream. This adds that touch of richness you're looking for in a pudding.

Ingredients: ( I have used all organic ingredients)
1.Tea rusk 4
2.Mango 2
3.Coconut sugar 2  to 3 teaspoon 
4.Cardamom powder 1pinch
5.Milk 1/4 cup to dip the Rusks.
6.Homemade Organic hung curd or organic Greek yogurt  1 cup.
Method:
1. Take  1/4 cup of milk add a teaspoon of coconut sugar and stir it now take 2 risks to dip them in the milk and let them absorb the milk and place them gently in the glass container.
2. Now take a hung curd to add a purée of 1 fresh mango to it add 1/2 teaspoon of cardamom powder and beat it with an electric hand mixer until it becomes thick and smooth frosting consistency.
3. Now take this yogurt frost and put it on rusks and cover the rusks completely.
4. Now dip another 2 rusks in milk and place them on these mango covered rusks and now add a generous amount of yogurt mango frosting on these rusks and cover them and keep it in a fridge to set at least for 6 hours.
5. After 6 hours take out and add 3 teaspoons of fresh mango purée on top of rusk and add few saffron strands and chopped dry fruits of your choice serve it immediately to relish.
