Bitter Gourd Fry.( Hagalkai pallya)

This is my family favorite Recipe Bitter gourd dry curry or Hagalkai palya you can enjoy this recipe with Jower Roti (Rotti), Rice, or Chapati.

Bitter gourd has several health benefits and offers myriad medicinal properties. bitter gourd helps to improve immunity and fight against infections. bitter melon or bitter gourd has always been associated with diabetes curing capability. bitter melon juice has always been part of Indian medicine, including in Ayurveda. Melon is also good for heart disease, cancer, kidneys, and constipation.

INGREDIENTS:
2 big bitter gourd
1 tsp salt, for imagination
. 2 tablespoon coconut oil
1 cup of water
1 tsp mustard seeds
1/2 tsp sesame seeds 
4 green chilly’s
1 cup tamarind juice with pulp 
3 tablespoons of jaggery 
1/2 tsp turmeric powder
1/4 cup fresh/desiccated coconut
. A handful of fresh coriander leaves 
Few curry leaves
Pinch of hing /asafoetida

Method:
1. Wash and chop the bitter gourd in a round circle shape and keep it ready. Dry roast the sesame seeds and keep it aside.
2. Heat 3 Tablespoons oil in a thick bottom pan. Add asafoetida mustard seeds. Once the seeds pop, add curry leaves and chopped bitter gourd. Also, add turmeric powder, mix it well and fry it until the bitter gourd turns golden brown. It may take 10 minutes on medium flame. 
3. Meanwhile, grind coconut, green chilies, sesame seeds,  1/2 tablespoons, mustard seeds coriander leaves and soaked tamarind along with water to a fine paste. You can add more water while grinding.
4. Once the bitter gourd turns brown color, add the masala, jaggery, and salt. And more water to get the desired consistency. I used around 1.5 cups of water.
5. Let it boil for 10 to 15 minutes on medium-low heat. After 10 to 15 minutes, consistency will become a little thick. Turn off the heat.
6. Enjoy this palya ( Sabji) with rice, rotti, chapati.
