Vegan Gluten Free Oil Free Spiced Chai Cake !!

First off, what is chai?

Well, chai is my favorite tea! Lol. But it’s so much more than that. The word chai actually means tea in India. In India, this would be known as masala chai – which simply means mixed spiced tea.

Tea in India isn’t just some black tea steeped in hot water – it’s full of warming aromatic spices, and prepared with hot milk and is served sweetened – hence it being masala – or mixed spices.

The aromas in the house are going to drive the neighbors insane so make sure you make enough to share with everyone !! it’s the intensity of flavors that are going to make you feel like a pro. Enjoy this wonderful cake with a cup of Tea.

In addition to the ground spices, I also used actual chai tea in this recipe to bump up the spices. Since date paste is the sweetener and base for this quick tea cake recipe, I just swapped out the usual water for blending with chai tea. Easy and extra flavorful!

Ingredients:

  • 1 cup pitted Medjool dates /any dates of your choice
  • 1 cup prepared tea ( in a glass of hot water add 2 teaspoon tea powder and let it boil fo 3 to 4 minutes strain this and collect tea diction)
  • 1 and  1/4 cup almond flour
  • 1/4 cup tapioca starch
  • 1/4 cup nondairy milk or (your choice of milk )
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp lemon juice1 tsp vanilla extract1 tsp cinnamon
  • 1/2 tsp ginger powder 
  • 1/2 tsp cardamom
  • 1/4 tsp cloves

Method:

1. Preheat the oven to 350F.

2. Pour the chai tea over the dates and soak for 10 minutes. Blend the chai tea, dates, lemon juice, non-dairy milk, and vanilla on high until smooth.

3. In a large mixing bowl combine the dry ingredients and mix briefly.
4. Add the date mixture. Stir to combine.
5. Lightly oil or line a loaf pan and pour in your batter, smoothing out the top.
6. Bake for 35 minutes at 350 degrees F.Cool completely and slice iI and enjoy it with your cup of tea.
