Buckwheat flatbed ( kuttu ki roti )


Buckwheat flour flatbread or Kuttu Roti is a wonderful gluten-free and vegan flatbread which can be a perfect alternative to regular wheat-based roti.

The different flours that I have been using like this buckwheat flour, millet flour, amaranth flour, sorghum flour and so on They have many health benefits and are a good source of dietary fiber.

WHAT IS BUCKWHEAT 
The name buckwheat is very confusing as it has the word wheat in it. But buckwheat is not related to wheat at all. It is a seed of a flowering fruit that is related to sorrel and rhubarb. For people with Celiac disease or people who are intolerant to gluten, this buckwheat flour is a great alternate to wheat and can be used in a variety of recipes that call for wheat flour.

Making any dough and rolling it out to a flatbread is hard when using gluten-free flours. The gluten is what helps bind the dough and also helps in rolling it out into a smooth flatbread. Since buckwheat flour does not have any gluten, the dough will crack quite a lot when rolling. Also, the dough is very sticky to handle.

Without wasting much time let’s get started :

Ingredients:
( I have used all organic ingredients)

• 1cup - Buckwheat flour 
• 3/4 cup hot water 
• 1/4 teaspoon - Pink  Himalayan Salt 

Method:
• Take a large mixing bowl to add Buckwheat flour, salt, and make a dome in the center.
• Next add 3/4 cup hot water and knead to smooth dough.
• Take a small ball sized dough and make a ball out of it.
• Pat and flatten with the help of palm and finger.
• also dust the parchment paper with little buckwheat flour to prevent roti from sticking while patting.
• Now pat gently with one hand and the other over the side to get the round shape.
• make sure to dust with buckwheat flour if required.
• Using both the hands pat as thin as possible.
• also dust off excess flour from the roti.
• Put the flattened dough onto the hot cast iron skillet.
• Now spread water over the roti with help wet cloth removing excess dough.
• Wait until the water evaporates then flip it to the other side.
• Press gently and cook all the sides.
• Serve Buckwheat flatbread / kuttu ki roti / with your favorite curry and chutney.
