Gluten free Vegan No Bake Avocado Pistachio Truffles!!

These Vegan Avocado truffles are naturally sweetened, dairy-free!!
Truffles are DELISH. They’re sweet, they’re rich, they’re smooth… they’re pretty much heaven.
What if I told you that they can be made with healthier ingredients and still win you over?

 Trust me you won’t even know there’s an uber-healthy avocado hidden in your sweet and chocolate bite-sized balls of heaven.  

These rich and dense avocado truffles are perfectly complemented by the roasted and lightly salted crunchy textures of crushed pistachios. A real medley of flavors in your mouth.

Instead of butter, we’re going to use avocado for this Healthy Avocado Chocolate  Truffles recipe- it’s smooth, it’s creamy, and it’s the perfect secret ingredient to make these truffles taste super delicious 😋.

This recipe is super simple and uses ingredients that you probably have on hand already! For these yummy truffles we need :

INGREDIENTS

3 ripe avocados 

3–4 tbsp  maple syrup/ honey 

1/4 cup  nut/seed butter ( I have used SunButter .)

1 tsp vanilla extract

1/2 cup  cocoa powder

1/2 tsp salt

1 tsp instant coffee powder

1/4 cup  shelled pistachios

1/4 cup unsweetened coconut flakes 

Method;

Scoop the avocados into a food processor. Add the maple syrup, nut/seed butter, and vanilla.

Process until smooth. Let it go for a while, make sure there are no lumps of avocado.

Add the cacao powder, salt, and instant coffee.

Process until combined.
Freeze until firm enough to roll into balls (2-3 hours).

Blend or finely chop the pistachios and coconut together.

Roll the avocado chocolate mixture into balls.

Coat in the pistachio coconut mixture.

Enjoy! Keep in the refrigerator.
