It’s one of those timeless dishes you can count on when the contents of the fridge look sparse and you’re short of time. Have it on the table in under 30 minutes and use whatever veggies you have to hand.
I usually have carrots, cabbage, peppers, and spring onions. Indeed, you can mix it up and throw in peas, corn, green beans, mange tout, or baby corn. It’s a very forgiving recipe.
What are Hakka noodles?
Hakka noodles are thin, flat noodles made from unleavened dough made with rice or wheat flour. To cook these noodles, you have to simply toss them in boiling water, cook al-dente, drain out the water and then toss them with your favorite veggies and sauces.
Without wasting much time let's jump to the recipe:
INGREDIENTS:
2 pack rice noodles
2 tsp oil
3 cloves garlic, finely chopped
1-inch ginger, finely chopped
1/2 onion, finely chopped
1/2 Onion finely chopped
1/2 carrot, thinly sliced
1/2 cup cabbage, thinly shredded
1 capsicum, thinly sliced
salt to taste
1 tbsp soy sauce
1 tbsp vinegar
1-2 tbsp chili sauce
1/2 tsp pepper, crushed
Method :
In a boiling water add 2 packs of rice noodles or any noodles of your choice.
Next, stir once and get the water to boil. or cook as per instructions.
Drain the water completely, and keep aside.
Heat a large pan with some oil. saute garlic and ginger.and saute onions on high flame. Add chopped veggies I carrot, cabbage, and capsicum.
Saute till they shrink in size. do not over cook as the vegetables will loose the crunchiness.
also add salt, soy sauce, vinegar, and chili sauce. give a good mix.add the cooked noodles. then add crushed pepper mix well. Do not over mix as the noodles will break.
Enjoy piping hot Hakka noodles.
