Mixed vegetable sambar!!

Sambar is probably one universal dish that all south Indian folks love. And it is also that one dish that recognizes a south Indian world wide.

Sambar is one of the very famous lentil-based vegetable stew, served with Rice, Idli, Dosa, and many other South Indian dishes. 

You can use different varieties of vegetables to make Sambar. Here I have used Carrot, eggplant potato, and the long tender Drumstick (Moringa oleifera), which adds a pleasant aroma and taste to the Sambar.

The best part about sambar is that it tastes extra delicious the next day. So, I always make some extra and we enjoy some steaming hot idlis or crispy dosas or even some rice with this sambar the next day morning.

Carrots are a good source of Vitamin K1 Potassium and  antioxidants 
Potatoes are rich in Vitamin C and Vitamin B6 and potassium

The fiber, Potassium vitamin C, vitamin B-6, and antioxidants in eggplant s.

Drumstick is a very healthy, flavorful vegetable and often recommended in diet especially to increase iron content.
Drumstick is also very good for digestion. It is a very widely used vegetable in south Indian cuisine. 

If you are a vegetarian, Toor Dal is one of the foremost protein sources that you can include in your diet. Besides, there are numerous health benefits that you can enjoy simply by consuming toor dal lentil every day in your lunch or dinner.

Ingredients:
  • 3 tsp oil
  • 1 tsp mustard
  • 3 dried red chili
  • Pinch of asafoetida
  • Few curry leaves
  • 6 to 7 shallots, halves  or one large chopped onion 
  • 1 tomato, finely chopped
  • 1/2 tsp turmeric
  • 1 tsp salt
  • drumstick pieces 
  • 1/4 cup chopped carrot
  • 1/4 cup chopped potato
  • 1/4 cup chopped eggplant
  • 2 cups of water
  • 1 cup Toor dal
  • 1/2 cup tamarind extract
  • 2 tbsp coriander, finely chopped
  • 2 tsp Fresh grated coconut /optional 
Cooking Method:
    • Add 1 cup of dal in a pressure cooker with 2 cups water and pressure cook for about 4  whistles.Let the pressure release naturally. 
•In a large vessel heat, 3 tsp oil and splutter tempering. Add onion and saute for 2 minutes. also, add   1 tomato and saute until tomatoes soften add all the vegetables and saute for 5 to 7 minutes.
• Next add turmeric, sambar powder, red chilly powder, and pink Himalayan salt.saute for a  minute until spices turn aromatic.

• Now add cooked toor dal mix well cover and boil for 5 minutes or until flavors are absorbed well.
• Add 1/2 cup tamarind extract and stir well.continue to boil for 5 minutes or until the raw flavor of tamarind is gone.
 • Add fresh coriander leaves and coconut enjoy mixed vegetables sambar with hot steamed rice.
