Vegan Stuffed Bell Peppers !!



These Vegan Stuffed Bell peppers are filled with healthy brown rice, celery, sprouted chickpeas some vegan cashew cheese !! You can add any vegetables of your choice!!

Stuffed peppers are really easy to make! You just mix up a tasty filling, stuff it into some hollowed out peppers and then bake them in the oven until heated through. 

This is flavorful, rich in taste, and perfect for lunch or dinner. It is furthermore plant-based, gluten-free, healthy, and super easy to make. Are you hungry already? Ok, so let’s start!

Ingredients :
1bell pepper
1 cup cooked brown rice or any rice of           your choice
1/3  cup chickpeas
1/3 cup coconut milk
1 medium-sized onion chopped
1clove of  garlic minced
1 tbsp oil 
1/2 tbsp curry powder
1/4 tsp paprika
Dalt and pepper to taste
Vegan cheese sauce

Method :
. Cook your favorite rice You will need 1 cup of cooked rice for this recipe.

. Boil the overnight soaked chickpeas in a pressure cooker for 6 to 8 whistle and keep aside.

. With a knife, carefully remove the "lid" of    the bell pepper and also discard all the        seeds.

. Heat oil in a skillet, add the chopped            onion, minced garlic, the sprouted  b b        chickpea and fry for 4-5 minutes over          medium heat.
. Add the curry powder, paprika salt/pepper to taste, and coconut milk to the skillet and let simmer for about 5 minutes on low-medium heat. Stir occasionally.
. Now add the cooked rice and check if the mixture needs more salt/pepper/spices.
. Fill the pepper with the rice/veggie mixture, add your favorite vegan cheese to taste and cook in the oven at about 375 degrees F for about 15 minutes. 
. Enjoy your stuffed vegan peppers!
