Vegan Baked Coconut Flour Donut
A healthier Gluten-Free Donuts recipe, made with coconut flour. These easy to make baked donuts are made with a dark chocolate glaze, these are just heavenly!!
These Vegan Baked Coconut Donuts are delicious, healthier donuts made without flour, dairy, or refined sugar these are naturally sweetened with dates !!
Unlike fried donuts made with yeast, these cake donuts are leavened with baking powder before they’re popped in the oven
layered these donuts with a dark chocolate glaze and then let my daughter decorate her own using the sprinkles of her choice.
INGREDIENTS:
I have used Bob's Red Mill Organic coconut flour tapioca starch.
Also used Sunbutter sunflower seeds butter in this recipe.
1 cup pitted organic Medjool dates
1/2 cup non-dairy milk
1/2 cup nut/seed butter (I have used sun butter )
1 tsp vanilla extract
1/4 cup coconut flour
1/4 cup tapioca starch*
1/2 tsp baking soda
1/4 tsp salt
For Glaze
1/2 cup dark chocolate
Melt the dark chocolate using a double boiler method at the end to glaze the donuts.
I have used While foods 365 organic dark chocolate chunks in this recipe.
Method:
Preheat the oven to 350F.
In a high-speed blender, blend the dates, milk, nut/seed butter, and vanilla until smooth.
Add the rest of the ingredients. Blend until combined.
Use a ziplock bag with one corner snipped off to pipe the batter into a cupcake pan. (that has been thoroughly sprayed with non-stick spray!) in each cupcake, mold put a small piece of parchment paper rolled in a round shape and pipe the batter around it to get the shape of the donut. ( smooth the tops.
Bake for 20 minutes at 350F.
